Right.  It'll just track right across.  Though by the sounds of it, if
you want to be able to change wich devel track you watch, tonight's the
night to pick to do it easily.  Going to a higher track is easier than
going to a lower one, if you want to leave testing with woody, you
should use woody for the distro name.  If you want to track testing
continuously, you should put in testing.  If you want to leave the
testing branch with the next release or try to track the current
progression, put in sarge.  If you want to track the release after
sarge, go with unstable/sid for now and be prepared to change it to the
name of whatever will come after sarge.

The devel branches (testing, unstable) never have security releases,
since whatever security patches released will appear in the next day's
run.

If you're on anything potato or older, you won't get updates.[1]
If you're on stable, use the ones for security.debian.org.
If you're on testing or unstable, just grab today's update.
