I found the following line in ~/.galeon/mozilla/galeon/prefs.js:
    user_pref("general.useragent.override",
              "Mozilla/5.0 Galeon/0.12.4 (Linux i686) Gecko/20011019");
Looks like you might be able to change this by hand.
