Got a shift key on that keyboard of yours?

Procmail is generally recommended for this.  The spamfilter package
includes support for generating black, white, and grey lists, which can
be most useful.  Alternatives have been discussed on list in the past
few weeks.  STFW generally for "mail filtering" and "spam filtering".
