I believe you also have to put:
unset use_from
in your .muttrc file (this is probably in the manual somewhere).

Excerpt from my ~/.mutt/* files:
unset use_from
my_hdr From: Chris Gushue <seymour@iname.com>

I am not sure if Exim is set up to rewrite the From header or not, I
know I turned that feature off in Sendmail on my system.
