You can use genericstable to rewrite outgoing mail, one or more records per user: debian cowboy@debian.org ibm cowboy@vnet.ibm.com etc. virtusertable works the opposite, mapping incomming mail to local user boxes... but sounds like you've probably got that part covered no?
