Hi,
What does your /etc/hosts look like? does it have the fully
qualified hostname in it? What does hostname -f return?
To answer your question, you may modify the sendmail.mc (or
even sendmail.cf, though that is not recommended unless you eschew
the m4 config -- only for the masochist amongst us) like so:

MASQUERADE_AS(Informatik.Uni-Oldenburg.DE)dnl
## Custom configurations below (will be preserved)
LOCAL_CONFIG
# my official domain name
# ... define this only if sendmail cannot automatically determine your domain
