No, I purged all tetex-* packages before installing them again, answered to all the questions that I would like the files to be managed by debconf, and selected only french as hyphenation.
If yes: I'm afraid the comment sign in front of For use with ngerman.sty (neue Rechtschreibung): is missing by accident. If not: could look, which file is shown, when typing "kpsewhich language.dat" and send us that file?
/usr/share/texmf/tex/generic/config/language.dat which is a link to /etc/texmf/language.datI'm sending the file as an attachment, I just hope Apple Mail will send it well.
