apt-get update downloads Packages.gz files from the sources listed in
/e/a/sources.conf and saves the result to binary form in
/var/cache/apt/.
apt-cache accesses the binary cache. a-c seach queries all packages,
not just installed ones.

xine-ui isn't in testing, and AFAICT you have only a testing source,
so after a-g updating, it won't be visible.

Really, you should just not continue if its going to remove packages
which you know you want. Note that sometimes transition packages can
get removed; see a message I sent today to -mentors about
conflicts+provides+replaces.
