In general: If you are the only maintainer you are fre to leave out
the Uploaders field.  Keeping debian-med-packaging as Uploaders is
a nice thing to do because it keeps interested people informed about
the Upload itself (and if I'm not completely wrong about bugs the
package might gather).

In case somebody else than you uploads the package (for whatever reasons)
there are two options:

   1. It is a NMU and the Uploader makrs the package apropriately.
   2. The Uploader adds himself to the Uploaders field and declares
      this way (after asking you for agreement) that he really cares
      at a person with a key for this package.

What I am thinking is to put Debian-Med Packaging Team as the
maintainer and me + team as uploaders. But who exactly is the team?

I don't think that each member of the Alioth team is necessarily a
reader of the list.  I rather think that anybody who is subscribed to

is a member of the debian-med-packaging team.
