I don't think you have to wait to try it out today. I and others have
been making quite usable Squeeze-based images for several months.
Another way I was thinking about was to use vim only without any GUI
since the nxjc and java installers need to GUI to install and work, so
that can be done using the Live interactive shell. However in order to
add the code completion in vim for java, I would need to install eclim
and a prerequisite of eclim is to have eclipse installed. So I am
again stuck here....

I can't really comment on this, as I don't know the Java world well.
There is http://lists.debian.org/debian-java and perhaps if you
described your project they might be able to make some recommendations.
I already configured vjde on my system
(http://www.vim.org/scripts/script.php?script_id=1213) to give it a
try. Code completion works but for some reason it does not list all
the classes correctly. Example in java.util there should be the Date
class which was not listed, together with many others classes.
If I find a way to solve tab completion in vim, I would go about it
using vim and hence build a text based distro. Personally i hate GUIs
and if I can do it using console it will be great.
Or maybe use some native Java programmer's text editor like jedit?
