Thomas, if you have the resources, then you can surely pack another openjdk-8
version.  Maybe you don't care about AArch64 and ppc64le, but building for these
architectures some backports are required. Feel free to address these. Unstable
is perfectly fine for a package like openjdk-8, which is not released with jessie.

And if you have time to kill, there are still a lot of outstanding issues to
build the archive with java8 ...
