non sono un esperto.. anche io sto cercando ora qualcosa di simile, ma 
ancora sono alla fase 'embrionale'....
comunque spippolando con apt-cache ho trovato questi due che testero nei 
prossimi giorni :-)


cdrwt-aper:
taper replacement for amanda to support backups to CD-RW or DVD+RW
The Amanda CDRW-Taper is a drop-in replacement for the taper component 
of the
Amanda backup system. CDRW-Taper makes it possible to dump backups to 
CD-RW or
DVD+RW instead of tape.

multicd:
Backup your data to CD-R/CD-RW
multicd provides an easy way to backup a large number of files to multiple
CDs. Give multicd the files/directories you want backed up and it will
create as many CDs as it needs to, prompting the user to put in a new disc
whenever needed. It can be configured to run in a multi-threading mode,
where it will burn one image to a disc while it is copying files to another
image. This feature can be disabled for slower machines.

se fai qualche esperimento se mi fai sapere mi fai un favore... (in pvt
