The "home" that you set there does not need to be a user account, simply a location where mail can be delivered (remember you need to create the Maildirs yourself). It is very simple to configure, and I like that fact that the MTA, POP, and IMAP all use the same configuration information.
Thanks for this. Originally I did pursue courier-mta, but decided upon Exim4 for a number of reasons. I want to stick with Exim now as my MTA, but am quite open to Courier as my POP3/IMAP server.
