I hope you're not a nationalist, so you'll probably read my answer :)
I think the users which use Debian as a (gnome) desktop OS may install gnome 
from sid repository or even maybe from ubuntu, and non desktop users simply 
don't need it. 
I think it is too early to create backports for Sarge since it's not too 
outdated as for example Woody. 
Probably that is why backports don't include so much Sarge repositories.
But there was some folks on this mailing list who asked about GNOME 2.10 for 
Sarge, so I think you'll find a lot of comrades. Personally I prefer KDE.
