I know deegree - the wfs part - quite good.

Well, I will spend tonight some time to summarize some java gis
projects. I will also try to look after problems - like dependencies etc.

The main problem with deegree - in my opinion - will be the huge number
of dependencies on non-free java libraries for the different db backends
like oracle, arc sde etc ....

I don't know if its possible to configure the build only to build the
free parts. So we could build a package which supports only mysql and
postgis as databases.
