There are two books that I know of, and neither completely 
cover the topic.  They are:
  "Building Embedded Linux Systems", K. Yaghmour, O'Reilly, 
  ISBN 0-596-00222-X 
  "Embedded Linux", J. Lombardo, New Riders,
  ISBN 0-7357-0998-X

There are several project pages, with varying levels of 
documentation quality.  I would suggest searching Google linux 
for keywords like "embedded", "tiny", and "minimal".  Also 
look at the syslinux, isolinux and such at
http://syslinux.zytor.com/index.php  Check out 
http://busybox.net/ for info on building the base system.

There is a sharp learning curve in all of this, but it's fun.
