Simply remove the NFS entry from the client fstab, and LTSP
will immediately start using SSHFS.

Ok, this seems to be very simple indeed.

But maybe there are some other project ideas that might be suitable for GSoC.

I don't think that everything in DebianEdu is perfect and there is no need for improvements.
