Are you using spamd? Or just spamassassin? 

Assuming you have the child limits on spamd set high enough, you
should have no problem clearing a few hundred messages a minute.
[However, because dns rbl checks are slow, each message takes about
30s to go through spamd. Low child limits will cap your maximum
throughput per minute to about 2-3 times the child limit.]

(I haven't yet gotten around to load testing spamd with sendmail and
spamass-milter, but I'd expect it to be a bit higher than 30/min, even
on a athlon 700 with 320M)
