You can keep two versions of the sources.list file around. You
also need two apt.conf files, which you can select with the
APT_CONF environment variable. And don't forget to specify
APT::Get::List-Cleanup "false" in the config files to minimize
downloads. You can hide this with a little shell skript.

I consider doing this once potato is released as stable.
