You can use $BOOT_IMAGE (set by LILO) to select the right System.map.
For example, all my kernels have nicknames and I install them with a script
that copies vmlinuz and System.map to a directory called /boot/<nickname>.
This script als adds a new entry to lilo.conf and uses the nickname as a
label. When you boot, LILO sets $BOOT_IMAGE to the nickname and I use this
information in rc.boot to create the right symlinks. Works really fine.
It would be nice, however, if Debian would support something like this out
of the box.
