So the steps seem to be, clear partitions, try to install but get an error, and then reboot and try again and this time it works. I can recreate this scenario over and over if I remove the partiton table first. For my previous problem of disks not being detected, I just noticed that the installer doesn't actually detect the disk at the point in time when I am looking for them.
