I think guided partitioning is probably as lean as can be, unless we want to start writing to disk without properly warning people what's about to happen. (But we don't.) What you see is logical if no mirror was selected: you get an incomplete task list as only tasks that (by accident) have packages on the netinst will get included. It also means that you'll be missing _a lot_ of standard prio packages (including exim4). You can fix that running 'tasksel --new-install' on the installed system will allow you to correct things. If you also select the "manual package selection" option you get to review (and correct) selections before anything is installed/removed. I use debmirror at home with no problems at all. I think you just made a mistake during mirror selection or missed an error. Hmmm. Are you maybe missing suite symlinks on your mirror? You should be debmirroring "etch" and have a symlink testing->etch in dists (or vice-versa, but I prefer this as it makes for less surprises at release time).
