My rationale is very simple: if the default theme has a bright

In fact, one can imagine that font size can be selected at boot
time (maybe this is already the case, I did not check). But
this is hardly true for colors, they need to be predefined, which
is why different choices must be provided. Or an alternative
could also be to have a "reverse video" option.

that makes alot of sense.
As for the possibility of selecting fontsize we're not able to do it yet;
actually we don't really know which fonts we will use yet :)

even if we currently don't allow the user to set font-size at runtime, this won't be difficult to implement with some shell code . By the way, are we going to package our two GTK themes into rootskel-gtk or into a new udeb? Note that gnome-accessibility-themes includes many themes and we need only one of theme, moreover stripped by unneded PNGs to save up space

attilio@attilaptop:~/gtkdfb/gtk+$ du -s /usr/share/themes/HighContrast*

28      /usr/share/themes/HighContrastInverse
600     /usr/share/themes/HighContrastLargePrint
592     /usr/share/themes/HighContrastLargePrintInverse
