Actually, the question is more like, "where is the room to innovate on a PC?"!
When you build an appliance, it's exactly what you want and how you want it. Even if that means it won't be Windows-compatible.
If you _really_ want to innovate, pick up a soldering iron! Or, for those bigger projects, gEDA. :)
