The --default-release is a new feature of apt-get. You can have
multiple releases in your sources.list and tell apt-get which to use
normaly (best place for that is in the config).

Unless you have configured that or specify it on the comandline
apt-get will allways choose the highest version number, i.e. unstable
in this case, which you then also forced him to do.
