http://kegel.com/crosstool/ has lots of information on cross-compiling.
You could also install toolchain-source and try to build the
68k-toolchain with that (see /usr/share/doc/toolchain-source/README).

This is probably the easiest solution in your case. Just use the woody
installer
(http://ftp.debian.org/debian/dists/woody/main/disks-m68k/current/amiga/)
and then upgrade to sarge.

I'm not sure if amiga-fdisk can handle such big partitions, but if you
already partitioned your harddisk this shouldn't be a problem.
