I don't use gnome on m68k. Maybe not all packages were built for m68k.
gnome-desktop is probably a task package? You could try install all packages
listed in the task by hand, all the ones which are available for m68k. Maybe
that gives you a decent system.

Why? Because your modem does not run? My amiga has no modem. Because gnome
does not run? Its just a window manager or desktop, when I work on my amiga
I do not use a window manager or gnome, I log in with ssh and compile stuff.
I would bet that works better without running gnome or some fancy window
manager in the background.
Functionality might depend on what you want from your system. If you want it
shiny and colorful, you might be better of by buying a mac, a powermac.
