Try using a function instead:

unlock() {
  cdrdao unlock ... && sleep 1
}
...
unlock

You can't stick a complex command (foo && bar) in a variable and execute
it with a simple parameter expansion -- you would have to use eval for
that, and you really don't want to do that.  Just use a function.
