No, they do much more than that. The 2 port cards do RAID0, RAID1 and JBOD.The 4 & 8 port cards do RAID0, RAID1, RAID1+0 (a striped mirror or a mirred stripe, however you want to look at it), RAID5, and JBOD.
RAID levels 0 and 1 are just the most common uses (in my experience, at least).
