It doesn't. In the window where you can click to "Scan", at the
top-right under the menu you have a button that says "Save".
If you click on it, you'll see several choices, one of them called
"multipage". You can select it also just by hitting `C-m`.
Then you can scan the pages you need, one by one, and at the end, create
the single PDF containing all those scans.
[ In the past, this PDF was not very good (much too large), so I often
ended up passing it through some kind of dummy "pdf to pdf" conversion
that ended up (re)generating an equivalent PDF with a much more
palatable size. That was many years ago, so maybe that's been fixed
in the mean time. ]
