The Boot process and the partitioning scheme are two different things! GPT is a partition table. UEFI is booting. MBR is partitioning. While GPT is simpler than MBR (no more logical volumes) MBR also is limited in the size of partitions nowadays come in handy. Also mixing GPT and MBR partitioning you might confuse yourself (and your tools).
