I accomplished the same by creating /usr/local/bin/su containing these lines:
#! /bin/sh
PATH=$PATH:/sbin:/usr/sbin
/bin/su
and making it executable.
/usr/local/bin takes precedence over /bin/su in $PATH.
In fact, su now has its old behaviour back.
