If I can't solve this by tomorrow, I'll look at Debian Stretch (as that's still lighter than Bullseye)
If you believe Bullseye is too modern to your hardware, you are probably wrong. You can install server (no GUI) version of Bullseye on any 64bit CPU, including those on socket 775 from the late 2000th.
