Oh, debootstrap is definitely the way to go, then.

Pick your partition, mkfs.ext4 a filesystem, mount it, and:

debootstrap stable /PATH/TO/MOUNTPOINT http://deb.debian.org/debian/

then you can arrange booting via your existing grub menu or
whatever.
