Do you have anything in /etc/network/interfaces except lo?

There should not be anything

furthermore NetworkManager saves configuration under /var/lib/NetworkManager

But it could be something else in your configuration - look in the
journal/log or systemctl and post here 

sudo systemctl -l status network-manager
