As mentioned before, *buntu repositories provide collections of
educational software that is sorted regarding to the age of the
children. The same software likely is available for Debian too, but I
don't know if there are meta packages available too, build with the
knowledge of teachers, to fit to children of different ages.

Since the OP will use it for donated computers, it might be important,
that Debians packages are compiled to run on older CPUs.
