That's certainly possible - probably not the answer you're looking for
but... you set it in:-
/etc/dhcp/dhcpd.conf
See:-
man dhcpd.conf (also man dhcpd)
and the examples in:-
/usr/share/doc/isc-dhcp-server/examples/
