I think the GNOME network-manager is simply designer to cater to all needs
of network. So wpa_supplicant would simply be a dependence, so the GUI can
really configure everything, that it says. If you remove wpa_supplicant and
also remove the other two packages, you you won't be able to manage your
network from the GUI. At least not with network-manager-gnome. If you don't
rely on that, go ahead. The network will work. I don't have wpa_supplicant
installed on my Debian Squeeze and configure my network directly via the
config-files.
On the other hand: wpa_supplicant should be a small package and you could
just leave it, if it doesn't reek havoc on your bootup process. :-)
