What have you set GRUB_CMDLINE_LINUX_DEFAULT, GRUB_CMDLINE_LINUX,
GRUB_TERMINAL, GRUB_GFXMODE, GRUB_GFXPAYLOAD_LINUX to in
"/etc/default/grub"?
