You don't need to use UUIDs for LVs because their names are persistent
and (hopefully!) unique.

Do you have two or three disks?

There was a comment in your fstab that "second master is now on
/dev/hdc", which explains why you have sdc5 mounted on /mnt/hdb5 but
your root and boot are sdbX.
