Greg - all I can offer is my own experience, which is that I use a Thermaltake BlackX dock for usb connectivity to a PPC G4 mac and debian likes it quite well; they recently updated this model to include eSATA connectivity so maybe that would be a good choice. Here's a link: http://www.amazon.com/Thermaltake-BlacX-eSATA-Docking-Station/dp/B001A4HAFS.
Also, I recently bought a SIIG RAID 4-port SATA PCI card and use with Debian, which it also likes a lot. Note I am only using the SATA part of it to connect hdd to a mobo that is too old to support SATA without this card, not using the RAID part of it. My understanding is that SIIG is a pretty Linux-friendly company. I'm sure others on this list will correct me abruptly if they disagree with that statement. :)
Good luck,
Mark
