It depends which file system you use. On some file systems data are not
really erased just unlinked. That means that the data, but not the file
names could be recovered. I think no one will be able to help you much
further, if you don't tell us the file system you use.

Google should provide some hints on "recover file <your fs type>".

Of course it's best to try to prevent such mishaps for the future. I use
regular backups for all files and a version control system for all my
documents, etc.
