Pinning it to 1001 didn't work initially but when I changed this:
Pin: version 2.3.4-3

To this:
Pin: version 2.3.4

All worked ok. Now if I run apt-get upgrade I get the following output:
The following packages have been kept back:
 postfix postfix-dev postfix-mysql
0 upgraded, 0 newly installed, 0 to remove and 3 not upgraded.
