WHoa!  If you need to be told how to do this, you probably aren't ready 
to use unstable!

But on the off-chance I'm wrong, you put in lines that say 'sid' or 
'unstable' where the lines you posted above say 'etch'.

When I do this, I usually put the unstable lines in only as long as it 
takes to install the specific unstable software I need, and then I take 
thm out again.
