I use kopete because of integration to KDE (and decent IRC 
client), but what's the best is very loaded question. Run

apt-cache search jabber client

and you will get what's available. Most widely used on Linux are:

* Kopete (KDE; multi-protocol; well-integrated into KDE, support 
of Jabber is substantially better in 0.12 version, which 
unfortunately has not been packaged for Debian yet -- any 
volunteers? -- I use SVN version, but tarball is available at
http://prdownloads.sourceforge.net/kopete/kopete-0.12.1.tar.bz2?download)
* Gajim (Gnome -- Jabber only, supports a lot of advanced Jabber 
features)
* Gaim (Gnome -- multi-protocol, less strict about conformity 
with Jabber standards and customs)
* Psi (Qt -- well-looking in KDE; Jabber only and highly 
conforming with standards; now looking on support for 
VoIP/Jingle -- voice messaging with GTalk)
* Tkabber (Tcl/Tk -- i.e., never looks at home anywhere ;-), but 
it is very well developed Jabber-only client, highly conformant, 
with a lot of features).
