The easiest way I've found to get a 2.6 SMP kernel on installation is to select the 'expert26' install mode. There's an option to choose which kernel you'd like to install, and 2.6-SMP is one of the choices. The 'expert' part of it is somewhat misleading: if you've installed Debian before, you'll be fine.
