Multiple servers. It can get somewhat resource hungry, but since you're only using one setup at a time (unless you go to the next step, and add extra keyboards/mice/monitors, which is quite doable), stuff gets swapped out as necessary, so it's really no worse than a single X session would be, except at switch time.
