Use the command ip route for that!
Edit a script in /etc/network/ directory, like
# mcedit /etc/network/ip-up
#!/bin/sh
sleep 10
ip route add pptp-server-IP via gateway_IP dev eth0
ip route replace default dev ppp0

and edit a script ip-down
# mcedit /etc/network/ip-down
#!/bin/sh
ip route del pptp-server-IP via gateway_IP dev eth0
ip route replace default via gateway_IP dev eth0

You must run ip-up when start your network:
iface tunnel inet ppp
    provider sks-tunnel
    up /etc/network/ip-up
    down /etc/network/ip-down
