Rob,

You /should/ be able to do that from command line with a suitable
printer or script.  Man oowriter:

However, in confirming this, I noted a bug and just filed #342594:
openoffice.org-writer: Ignores command -pt printer_name; prints to
default printer)

While there should be a better way, you could set cups-pdf as default,
then oowriter -p file | pdftops.
