As root:

crontab -e

then add something like the following

15 00 * * * apt-get update && apt-get dist-upgrade

man 5 crontab 

(for more details (and to check the syntax :) )

The line above would execute the command at 00.15 every (day of
month)(month)(day of week) or thereabouts.
